- 4 large russet potatoes
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the potatoes, then pierce them with a fork several times.
- Bake the potatoes for about 45 minutes or until tender.
- Let the potatoes cool slightly, then cut them in half lengthwise and scoop out some of the flesh, leaving a thin layer.
- Brush the insides of the potato skins with olive oil and season with garlic powder, onion powder, oregano, thyme, salt, and pepper.
- Sprinkle grated Parmesan cheese generously inside each potato skin.
- Place the potato skins on a baking sheet and bake for an additional 15-20 minutes, or until crispy and golden brown.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, you can add cooked bacon bits or shredded cheese on top before the final baking.
- These potato skins can be made ahead of time and reheated in the oven.
