Ingredients

  • 4 large russet potatoes
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then pierce them with a fork several times.
  3. Bake the potatoes for about 45 minutes or until tender.
  4. Let the potatoes cool slightly, then cut them in half lengthwise and scoop out some of the flesh, leaving a thin layer.
  5. Brush the insides of the potato skins with olive oil and season with garlic powder, onion powder, oregano, thyme, salt, and pepper.
  6. Sprinkle grated Parmesan cheese generously inside each potato skin.
  7. Place the potato skins on a baking sheet and bake for an additional 15-20 minutes, or until crispy and golden brown.
  8. Garnish with fresh parsley before serving.
