Ingredients

  • 1 cup grated Parmesan cheese
  • 1 medium zucchini, grated
  • 1 cup breadcrumbs
  • 2 eggs

  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the grated zucchini, breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Dip each chicken breast in the beaten eggs, then coat with the zucchini and cheese mixture.
  5. Place the coated chicken on a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes or until the chicken is cooked through and the crust is golden brown.
  7. Let it rest for a few minutes before serving.
