- 2 chicken breasts
- 1 cup grated Parmesan cheese
- 1 medium zucchini, grated
- 1 cup breadcrumbs
- 2 eggs
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the grated zucchini, breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each chicken breast in the beaten eggs, then coat with the zucchini and cheese mixture.
- Place the coated chicken on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes or until the chicken is cooked through and the crust is golden brown.
- Let it rest for a few minutes before serving.
