- 4 cups vegetable broth
- 1 package (9 oz) cheese tortellini
- 4 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and sauté until translucent.
- Stir in minced garlic and cook for another minute.
- Pour in vegetable broth and bring to a boil.
- Add cheese tortellini and cook according to package instructions.
- Once tortellini is cooked, stir in fresh spinach and Italian seasoning.
- Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese.
