Ingredients

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 package (9 oz) cheese tortellini
  • 4 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Stir in minced garlic and cook for another minute.
  4. Pour in vegetable broth and bring to a boil.
  5. Add cheese tortellini and cook according to package instructions.
  6. Once tortellini is cooked, stir in fresh spinach and Italian seasoning.
  7. Season with salt and pepper to taste.
