A delicious and easy one-pot meal featuring smoked sausage, colorful peppers, and pasta, perfect for a quick weeknight dinner.

- 12 oz smoked sausage, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- 8 oz pasta (penne or rotini)
- 4 cups chicken broth
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- Salt and pepper to taste
Instructions
- In a large pot, heat a little oil over medium heat and add the sliced smoked sausage. Cook until browned.
- Add the chopped onion, sliced bell peppers, and minced garlic. Sauté until the vegetables are tender.
- Stir in the Italian seasoning and red pepper flakes, cooking for another minute.
- Add the pasta and chicken broth to the pot. Bring to a boil, then reduce heat and simmer until the pasta is cooked, about 10-12 minutes.
- Stir in the cherry tomatoes and spinach, cooking until the spinach is wilted.
- Season with salt and pepper to taste before serving.
Notes
- Feel free to use any type of smoked sausage you prefer.
- For a spicier dish, increase the amount of red pepper flakes.
- This dish can be made ahead and reheated for leftovers.
