Ingredients

  • 8 oz penne pasta
  • 1 lb ground lamb or beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup feta cheese, crumbled
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Greek yogurt (for serving)

Instructions

  1. In a large pot, brown the ground lamb or beef over medium heat until fully cooked. Drain excess fat.
  2. Add the diced onion and minced garlic to the pot, cooking until the onion is translucent.
  3. Stir in the diced tomatoes, chicken broth, oregano, thyme, salt, and pepper.
  4. Add the penne pasta and bring to a boil. Reduce heat and simmer, covered, for about 10-12 minutes or until pasta is al dente.
  5. Once the pasta is cooked, stir in the feta cheese and olives until well combined.
  6. Remove from heat and let it sit for a few minutes before serving.
  7. Garnish with fresh parsley and serve with a dollop of Greek yogurt on top.
