A delicious and easy-to-make One-Pot Greek Gyro Pasta Bake that combines the flavors of Greek gyros with pasta for a comforting meal.

- 8 oz penne pasta
- 1 lb ground lamb or beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup feta cheese, crumbled
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 1/2 cup Greek yogurt (for serving)
Instructions
- In a large pot, brown the ground lamb or beef over medium heat until fully cooked. Drain excess fat.
- Add the diced onion and minced garlic to the pot, cooking until the onion is translucent.
- Stir in the diced tomatoes, chicken broth, oregano, thyme, salt, and pepper.
- Add the penne pasta and bring to a boil. Reduce heat and simmer, covered, for about 10-12 minutes or until pasta is al dente.
- Once the pasta is cooked, stir in the feta cheese and olives until well combined.
- Remove from heat and let it sit for a few minutes before serving.
- Garnish with fresh parsley and serve with a dollop of Greek yogurt on top.
Notes
- Feel free to substitute ground lamb with ground turkey or chicken for a lighter option.
- For a vegetarian version, use plant-based ground meat and vegetable broth.
- This dish can be made ahead of time and reheated for easy meals.
