- 2 cups broccoli florets
- 1 cup rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic, sauté until translucent.
- Add diced chicken and cook until browned.
- Stir in rice, chicken broth, and season with salt and pepper.
- Bring to a boil, then reduce heat and cover.
- Cook for 15 minutes, then add broccoli on top.
- Cover and cook for an additional 5-7 minutes until broccoli is tender and rice is cooked.
- Fluff with a fork and serve hot.
