- 4 chicken thighs
- 2 cups baby potatoes, halved
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, sliced
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Add chicken thighs to the bowl and coat them well with the marinade.
- In a baking dish, arrange the marinated chicken, halved potatoes, and chopped vegetables.
- Drizzle any remaining marinade over the top.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the potatoes are tender.
