- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups French onion soup
- 1 cup shredded cheese (Swiss or Gruyere)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large oven-safe skillet, heat olive oil over medium heat.
- Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
- Brown the chicken on both sides in the skillet, about 4-5 minutes per side.
- Remove the chicken and set aside.
- Add the rice to the skillet and stir to coat with the oil.
- Pour in the French onion soup and stir to combine.
- Place the chicken back on top of the rice mixture.
- Cover the skillet with a lid or aluminum foil and bake for 25-30 minutes.
- Remove the cover, sprinkle cheese on top, and bake for an additional 10 minutes until the cheese is melted and bubbly.
Notes
- For added flavor, you can sauté some sliced onions before adding the rice.
- This dish can be made ahead of time and reheated.
- Feel free to use brown rice, but adjust the cooking time accordingly.
