- Salt, for pasta water
Instructions
- Bring a large pot of salted water to a boil.
- Add the spaghetti and cook according to package instructions until al dente.
- While the pasta is cooking, in a large bowl, combine the grated Pecorino Romano cheese and a generous amount of freshly cracked black pepper.
- Once the pasta is cooked, reserve a cup of pasta water and then drain the spaghetti.
- Add the hot spaghetti to the bowl with the cheese and pepper mixture.
- Quickly toss the pasta with the cheese and pepper, adding reserved pasta water a little at a time until a creamy sauce forms.
- Serve immediately, garnished with extra cheese and pepper if desired.
