Description

A simple yet delicious recipe for Cacio E Pepe, a classic Roman pasta dish made with just a few ingredients.

Ingredients

Scale
  • 400g spaghetti
  • 100g Pecorino Romano cheese, grated
  • Freshly cracked black pepper, to taste
  • Salt, for pasta water

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the spaghetti and cook according to package instructions until al dente.
  3. While the pasta is cooking, in a large bowl, combine the grated Pecorino Romano cheese and a generous amount of freshly cracked black pepper.
  4. Once the pasta is cooked, reserve a cup of pasta water and then drain the spaghetti.
  5. Add the hot spaghetti to the bowl with the cheese and pepper mixture.
  6. Quickly toss the pasta with the cheese and pepper, adding reserved pasta water a little at a time until a creamy sauce forms.
  7. Serve immediately, garnished with extra cheese and pepper if desired.

Notes

  • Use high-quality Pecorino Romano for the best flavor.
  • Adjust the amount of black pepper according to your taste preference.
  • Make sure to reserve enough pasta water to achieve the desired sauce consistency.
