Description
A delicious and savory meatloaf made with ground chicken and stuffed with gooey mozzarella cheese.
Ingredients

- 1 lb ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped fresh parsley
- 1/4 cup milk
- 1 egg
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded mozzarella cheese
- 1/2 cup marinara sauce
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, milk, egg, garlic powder, onion powder, salt, and pepper.
- Mix until well combined.
- On a baking sheet, shape half of the chicken mixture into a loaf.
- Make a well in the center and fill it with shredded mozzarella cheese.
- Top with the remaining chicken mixture, sealing the edges.
- Spread marinara sauce over the top of the meatloaf.
- Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
- Let it rest for 10 minutes before slicing.
Notes
- For extra flavor, add Italian seasoning to the meat mixture.
- Serve with a side of vegetables or pasta.
- Leftovers can be stored in the refrigerator for up to 3 days.
