Description

A delicious and savory meatloaf made with ground chicken and stuffed with gooey mozzarella cheese.


Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped fresh parsley
  • 1/4 cup milk
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, milk, egg, garlic powder, onion powder, salt, and pepper.
  3. Mix until well combined.
  4. On a baking sheet, shape half of the chicken mixture into a loaf.
  5. Make a well in the center and fill it with shredded mozzarella cheese.
  6. Top with the remaining chicken mixture, sealing the edges.
  7. Spread marinara sauce over the top of the meatloaf.
  8. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  9. Let it rest for 10 minutes before slicing.

Notes

  • For extra flavor, add Italian seasoning to the meat mixture.
  • Serve with a side of vegetables or pasta.
  • Leftovers can be stored in the refrigerator for up to 3 days.
