Ingredients

  • 1 lb ground beef
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and bell pepper, sauté until softened.
  3. Stir in minced garlic and cook for another minute.
  4. Add ground beef, breaking it apart, and cook until browned.
  5. Mix in diced potatoes, chili powder, cumin, salt, and pepper.
  6. Pour in diced tomatoes and stir well.
  7. Cover and cook for about 20 minutes, stirring occasionally, until potatoes are tender.
  8. Garnish with fresh cilantro before serving.

Notes

  • For a spicier dish, add jalapeños or hot sauce.
