- 2 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes (14.5 oz)
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and bell pepper, sauté until softened.
- Stir in minced garlic and cook for another minute.
- Add ground beef, breaking it apart, and cook until browned.
- Mix in diced potatoes, chili powder, cumin, salt, and pepper.
- Pour in diced tomatoes and stir well.
- Cover and cook for about 20 minutes, stirring occasionally, until potatoes are tender.
- Garnish with fresh cilantro before serving.
Notes
- For a spicier dish, add jalapeños or hot sauce.
