- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- Prepare the filling: In a mixing bowl, combine the shredded mozzarella cheese, crumbled feta cheese, chopped spinach, diced tomato, sliced red onion, and a dash of black pepper. Mix gently to combine.
- Assemble the quesadilla: Lay one flour tortilla flat on a clean surface. Take one-fourth of your flavorful filling mixture and place it on one half of the tortilla. Fold the tortilla over to envelop the filling fully.
- Heat the skillet: Warm your non-stick skillet over medium heat. Pour in the olive oil and let it shimmer.
- Cook the quesadilla: Place your filled tortilla in the skillet and cook for about 3–4 minutes until the bottom turns golden brown and cheese melts.
- Flip with care: Use your spatula to gently flip the quesadilla and cook for another 3–4 minutes until both sides are crispy.
- Slice and serve: Remove your quesadilla from heat, slice into wedges, and serve warm.
Notes
For a healthier twist, consider using whole wheat tortillas or adding bell peppers. You can also prepare the filling ahead of time for a quicker meal.
