Description

Delightfully simple Mediterranean Quesadillas filled with creamy feta, melting mozzarella, fresh spinach, juicy tomatoes, and zesty red onion, all tucked into a golden tortilla.

Ingredients

Scale
  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. Prepare the filling: In a mixing bowl, combine the shredded mozzarella cheese, crumbled feta cheese, chopped spinach, diced tomato, sliced red onion, and a dash of black pepper. Mix gently to combine.
  2. Assemble the quesadilla: Lay one flour tortilla flat on a clean surface. Take one-fourth of your flavorful filling mixture and place it on one half of the tortilla. Fold the tortilla over to envelop the filling fully.
  3. Heat the skillet: Warm your non-stick skillet over medium heat. Pour in the olive oil and let it shimmer.
  4. Cook the quesadilla: Place your filled tortilla in the skillet and cook for about 3–4 minutes until the bottom turns golden brown and cheese melts.
  5. Flip with care: Use your spatula to gently flip the quesadilla and cook for another 3–4 minutes until both sides are crispy.
  6. Slice and serve: Remove your quesadilla from heat, slice into wedges, and serve warm.

Notes

For a healthier twist, consider using whole wheat tortillas or adding bell peppers. You can also prepare the filling ahead of time for a quicker meal.
