- 2 cups pasta (fusilli or penne)
- 1 pound chicken breast, cooked and diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta: Boil water in a large pot, and once bubbling, add the pasta. Cook according to package instructions until al dente. Drain and let cool slightly.
- Combine ingredients: In a large mixing bowl, toss together the cooked pasta, diced chicken, cherry tomatoes, cucumber, sliced red onion, Kalamata olives, and crumbled feta cheese.
- Make the dressing: In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper until well-blended.
- Dress the pasta: Pour the dressing over the pasta salad, and gently toss to coat all ingredients.
- Garnish: Sprinkle fresh parsley over the top.
- Serve: Enjoy it chilled or at room temperature.
