  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta: Boil water in a large pot, and once bubbling, add the pasta. Cook according to package instructions until al dente. Drain and let cool slightly.
  2. Combine ingredients: In a large mixing bowl, toss together the cooked pasta, diced chicken, cherry tomatoes, cucumber, sliced red onion, Kalamata olives, and crumbled feta cheese.
  3. Make the dressing: In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper until well-blended.
  4. Dress the pasta: Pour the dressing over the pasta salad, and gently toss to coat all ingredients.
  5. Garnish: Sprinkle fresh parsley over the top.
