  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add diced chicken and cook until browned.
  4. Stir in orzo, chicken broth, tomatoes, spinach, oregano, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 10 minutes.
  6. Transfer the mixture to a baking dish and top with feta cheese and olives.
  7. Bake in the preheated oven for 20-25 minutes, or until the orzo is tender and the chicken is cooked through.
