- 1 lb chicken breast, diced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add diced chicken and cook until browned.
- Stir in orzo, chicken broth, tomatoes, spinach, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Transfer the mixture to a baking dish and top with feta cheese and olives.
- Bake in the preheated oven for 20-25 minutes, or until the orzo is tender and the chicken is cooked through.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add other vegetables like bell peppers or zucchini.
- This dish can be made ahead of time and reheated.
- For a spicier version, add red pepper flakes.
