Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups baby potatoes
  • 1 cup feta cheese
  • 1 lemon (juiced and zested)
  • 2 tablespoons fresh parsley (chopped)
  • 1/4 cup Greek yogurt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Coat the chicken breasts with the mixture.
  3. Place the chicken on a baking sheet and bake for 25-30 minutes until cooked through.
  4. Meanwhile, boil the baby potatoes until tender, then drain and toss with olive oil, salt, and pepper. Roast in the oven for 20 minutes until crispy.
  5. In a separate bowl, combine feta cheese, lemon juice, lemon zest, Greek yogurt, and parsley to make the dip.
  6. Serve the chicken with crispy potatoes and lemon feta dip on the side.
