- 4 chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups baby potatoes
- 1 cup feta cheese
- 1 lemon (juiced and zested)
- 2 tablespoons fresh parsley (chopped)
- 1/4 cup Greek yogurt
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Coat the chicken breasts with the mixture.
- Place the chicken on a baking sheet and bake for 25-30 minutes until cooked through.
- Meanwhile, boil the baby potatoes until tender, then drain and toss with olive oil, salt, and pepper. Roast in the oven for 20 minutes until crispy.
- In a separate bowl, combine feta cheese, lemon juice, lemon zest, Greek yogurt, and parsley to make the dip.
- Serve the chicken with crispy potatoes and lemon feta dip on the side.
