Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, sugar, and brown sugar until smooth.
  3. Add the pumpkin puree, egg, and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. While the cookies are baking, prepare the glaze by whisking together the powdered sugar and maple syrup until smooth.
  9. Once the cookies are cool, drizzle the maple glaze over the top.
