Ingredients

  • 4 chicken breasts
  • 1/2 cup maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups carrots, chopped
  • 2 cups parsnips, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix maple syrup, soy sauce, Dijon mustard, garlic powder, and onion powder.
  3. Place chicken breasts in a baking dish and pour the maple glaze over them.
  4. In another bowl, toss the chopped carrots and parsnips with olive oil, salt, and pepper.
  5. Spread the root vegetables around the chicken in the baking dish.
  6. Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
  7. Serve hot, drizzling any remaining glaze over the chicken and veggies.
