- 4 chicken breasts
- 1/2 cup maple syrup
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 cups carrots, chopped
- 2 cups parsnips, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix maple syrup, soy sauce, Dijon mustard, garlic powder, and onion powder.
- Place chicken breasts in a baking dish and pour the maple glaze over them.
- In another bowl, toss the chopped carrots and parsnips with olive oil, salt, and pepper.
- Spread the root vegetables around the chicken in the baking dish.
- Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
- Serve hot, drizzling any remaining glaze over the chicken and veggies.
Notes
- For extra flavor, marinate the chicken in the glaze for a few hours before cooking.
- Feel free to substitute other root vegetables like sweet potatoes or beets.
- Adjust the sweetness of the glaze by adding more or less maple syrup.
