- 2 medium Sweet Potatoes
- 2 tablespoons Olive Oil
- 1 teaspoon Garlic Powder
- 4 Chicken Breasts
- 3 tablespoons Maple Syrup
- 2 tablespoons Dijon Mustard
- 1 cup Quinoa or Brown Rice
- Fresh Herbs (parsley or cilantro)
Instructions
- Preheat your oven to 400°F (200°C).
- Prep the sweet potatoes by peeling and chopping them into cubes, then toss with olive oil, garlic powder, and salt.
- Roast the sweet potatoes on a baking sheet for 25-30 minutes until tender and caramelized.
- Prepare the maple-Dijon glaze by whisking together maple syrup and Dijon mustard.
- Coat the chicken breasts with salt and pepper and brush with the maple-Dijon glaze.
- Cook the chicken in the oven for 20-25 minutes until it reaches an internal temperature of 165°F (75°C).
- Cook quinoa or brown rice according to package instructions.
- Assemble the bowls by placing quinoa at the base, layered with sweet potatoes and chicken, topped with fresh herbs.
Notes
Make-Ahead: Prep a day in advance for richer flavors. Store sweet potatoes and chicken separately in the fridge.
