Description

A comforting bowl featuring roasted sweet potatoes, juicy chicken glazed in maple and Dijon, served over quinoa.


Ingredients

  • 2 medium Sweet Potatoes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 4 Chicken Breasts
  • 3 tablespoons Maple Syrup
  • 2 tablespoons Dijon Mustard
  • 1 cup Quinoa or Brown Rice
  • Fresh Herbs (parsley or cilantro)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prep the sweet potatoes by peeling and chopping them into cubes, then toss with olive oil, garlic powder, and salt.
  3. Roast the sweet potatoes on a baking sheet for 25-30 minutes until tender and caramelized.
  4. Prepare the maple-Dijon glaze by whisking together maple syrup and Dijon mustard.
  5. Coat the chicken breasts with salt and pepper and brush with the maple-Dijon glaze.
  6. Cook the chicken in the oven for 20-25 minutes until it reaches an internal temperature of 165°F (75°C).
  7. Cook quinoa or brown rice according to package instructions.
  8. Assemble the bowls by placing quinoa at the base, layered with sweet potatoes and chicken, topped with fresh herbs.

Notes

Make-Ahead: Prep a day in advance for richer flavors. Store sweet potatoes and chicken separately in the fridge.
