- 3 large potatoes, diced
- 1 lb ground beef or turkey
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 avocado, diced
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
- Sour cream (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Toss the diced potatoes with olive oil, chili powder, cumin, salt, and pepper; spread on a baking sheet.
- Roast the potatoes for about 25-30 minutes, turning halfway.
- Cook the ground meat in a skillet over medium heat for about 7-10 minutes.
- Assemble the bowls with layers of potatoes, meat, black beans, corn, diced tomatoes, and avocado.
- Top with shredded cheese, fresh cilantro, and a dollop of sour cream.
