Ingredients

  • 3 large potatoes, diced
  • 1 lb ground beef or turkey
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Sour cream (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, chili powder, cumin, salt, and pepper; spread on a baking sheet.
  3. Roast the potatoes for about 25-30 minutes, turning halfway.
  4. Cook the ground meat in a skillet over medium heat for about 7-10 minutes.
  5. Assemble the bowls with layers of potatoes, meat, black beans, corn, diced tomatoes, and avocado.
