- 1 pound breakfast sausage
- 4 cups frozen hash browns
- 1 cup shredded cheddar cheese
- 4 large eggs
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the breakfast sausage and cook until browned.
- Stir in the diced onions and bell peppers, cooking until softened.
- Add the frozen hash browns and cook until crispy and golden brown.
- Make four wells in the hash browns and crack an egg into each well.
- Cover the skillet and cook until the eggs are set to your liking.
- Sprinkle shredded cheddar cheese over the top and let it melt.
- Season with salt and pepper before serving.

- Feel free to add other vegetables like spinach or mushrooms.
- For a spicier version, add jalapeños or hot sauce.
