A delicious and moist chicken meatloaf infused with lemon and herbs, topped with a rich garlic butter sauce.

- 1 lb ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- 1 egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup butter
- 2 cloves garlic, minced (for garlic butter)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, basil, minced garlic, lemon zest, lemon juice, egg, salt, and pepper.
- Mix until well combined and shape into a loaf.
- Place the meatloaf in a greased baking dish.
- Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
- While the meatloaf is baking, melt butter in a small saucepan over medium heat.
- Add minced garlic to the melted butter and sauté until fragrant.
- Once the meatloaf is done, drizzle the garlic butter over the top before serving.
Notes
- For added moisture, you can include a small amount of chicken broth in the mixture.
- Let the meatloaf rest for 10 minutes before slicing for better texture.
- Serve with a side of vegetables or mashed potatoes for a complete meal.
