Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, combine the olive oil, minced garlic, lemon juice, lemon zest, salt, and pepper.
  4. Add the halved potatoes to the bowl and toss until they are well coated.
  5. Spread the potatoes in a single layer on a baking sheet.
