- 2 pounds baby potatoes
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1 lemon, juiced and zested
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large bowl, combine the olive oil, minced garlic, lemon juice, lemon zest, salt, and pepper.
- Add the halved potatoes to the bowl and toss until they are well coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until golden brown and tender.
- Remove from the oven and sprinkle with fresh parsley before serving.
Notes
- For extra flavor, you can add rosemary or thyme.
- Make sure to cut the potatoes into similar sizes for even cooking.
