- 1 tablespoon lemon zest

Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, mix together the all-purpose flour, whole wheat flour, sugar, baking powder, and salt.
- In another bowl, whisk together the melted butter, eggs, milk, lemon juice, and lemon zest.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the blueberries.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack.
Notes
Consider using frozen blueberries without thawing them. Customize the muffins by adding nuts or using coconut oil instead of butter.
