  • 2 tablespoons extra virgin olive oil
  • 1 medium jalapeño pepper, thinly sliced
  • 1 cup fresh raspberries

Instructions

  1. Prepare the Glaze: In a mixing bowl, whisk together the raspberry preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Set it aside.
  2. Season the Chicken: Pat the chicken thighs dry with paper towel and sprinkle with salt, black pepper, and chili powder.
  3. Sear the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken thighs and sear for about 3-4 minutes on each side until golden brown.
  4. Add the Glaze: Pour the glaze over the chicken thighs, cover, and cook for an additional 10 minutes.
  5. Incorporate Fresh Ingredients: Fold in the sliced jalapeño and fresh raspberries, letting them simmer for a couple of minutes.
  6. Serve: Plate the chicken, spooning the glaze and raspberries over the top, garnished with more fresh raspberries if desired.

Notes
