- 1 cup milk
- 2 large eggs
- 1/4 cup melted butter
- 1 cup shredded cheddar cheese
- 1/2 cup diced jalapeños (fresh or pickled)
Instructions
- Preheat the oven to 400°F (200°C) and grease a mini muffin tin.
- In a large bowl, mix together cornmeal, flour, baking powder, and salt.
- In another bowl, whisk together milk, eggs, and melted butter.
- Combine the wet ingredients with the dry ingredients until just mixed.
- Fold in the shredded cheese and diced jalapeños.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 15-20 minutes or until golden brown and a toothpick comes out clean.
- Let cool slightly before serving.
Notes
- Adjust the amount of jalapeños based on your spice preference.
- These can be made ahead of time and reheated in the oven.
- Serve with sour cream or a dipping sauce for added flavor.
