- 1 lb ground Italian sausage

- 2 cups spinach or kale
- 1 tsp Italian seasoning

Instructions
- Cook the lasagna noodles in a large pot of salted boiling water according to package instructions. Drain and set aside.
- Brown the Italian sausage in a large pot or Dutch oven over medium heat, stirring occasionally until cooked through.
- Sauté the chopped onion and minced garlic until the onion is translucent and tender.
- Simmer in the chicken broth, bringing everything to a gentle boil.
- Mix in the ricotta cheese, stirring until well integrated.
- Add the shredded mozzarella and grated Parmesan, allowing them to melt into the soup.
- Introduce the spinach or kale and stir until just wilted.
- Season with Italian seasoning, salt, and pepper to taste.
- Incorporate the broken lasagna noodles into the soup, stirring gently.
- Serve hot, garnished with extra cheese if desired.
Notes
For a lighter version, substitute ground sausage with turkey or chicken sausage and use low-fat cheeses if desired. This soup can be made in advance and stores well in the fridge for up to three days.
