Ingredients

  • 1 lb ground Italian sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 cups spinach or kale
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the lasagna noodles in a large pot of salted boiling water according to package instructions. Drain and set aside.
  2. Brown the Italian sausage in a large pot or Dutch oven over medium heat, stirring occasionally until cooked through.
  3. Sauté the chopped onion and minced garlic until the onion is translucent and tender.
  4. Simmer in the chicken broth, bringing everything to a gentle boil.
  5. Mix in the ricotta cheese, stirring until well integrated.
  6. Add the shredded mozzarella and grated Parmesan, allowing them to melt into the soup.
  7. Introduce the spinach or kale and stir until just wilted.

Notes
