Ingredients
- Shrimp (medium to large)
- Honey
- Garlic (fresh or minced)
- Soy Sauce (or tamari for gluten-free)
- Brown Sugar (or coconut sugar)
- Vegetable Oil (or olive oil)
- Rice (white, brown, or jasmine)
- Mixed Vegetables (bell peppers, snap peas, carrots)
- Green Onions (for garnish)
Instructions
- Marinate the shrimp by combining honey, minced garlic, soy sauce, and brown sugar in a bowl. Coat the shrimp and marinate for at least 15 minutes.
- Sauté the shrimp in a non-stick skillet with oil over medium heat for about 2-3 minutes per side until pink.
- Cook the rice in a pot with water and salt according to package instructions.
- Sauté the mixed vegetables in the same skillet for 4-5 minutes until crisp-tender.
- Assemble the bowls starting with rice at the bottom, adding vegetables and then the shrimp on top.
- Garnish with chopped green onions and serve immediately.
Notes
Pat shrimp dry before marinating, and avoid overcrowding the pan while cooking.
