- 2 lbs beef chuck roast
- 1 cup beef broth
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 4 hoagie rolls
- 1 cup provolone cheese, sliced
Instructions
- Season the beef chuck roast with salt and pepper.
- Set the Instant Pot to sauté mode and brown the roast on all sides.
- Add sliced onions and minced garlic, cooking until fragrant.
- Pour in beef broth and Worcestershire sauce, then add thyme.
- Seal the Instant Pot and cook on high pressure for 60 minutes.
- Allow natural release for 10 minutes, then quick release the remaining pressure.
- Remove the beef, shred it, and return it to the pot to soak in the juices.
- Toast the hoagie rolls and fill them with the shredded beef and provolone cheese.
- Serve with the au jus for dipping.
Notes
- For extra flavor, marinate the beef overnight.
- Serve with pickled jalapeños for a spicy kick.
- Leftovers can be stored in the refrigerator for up to 3 days.
