Ingredients

  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt
  • 1 cup fresh peaches, chopped
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the milk and vanilla extract until smooth.
  5. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  6. Gradually add the dry ingredients to the wet mixture until just combined.
  7. Fold in the chopped peaches with a spatula.
  8. Divide the batter evenly among the cupcake liners.
  9. Bake for 18-20 minutes, or until a toothpick comes out clean.
  10. Let them cool completely on a wire rack.
  11. Beat together the cream cheese and powdered sugar until smooth, then add heavy cream and vanilla extract.
  12. Once cool, pipe or spread the frosting onto the cupcakes.
