- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup onion, finely chopped
- 1/4 cup bell pepper, finely chopped
- 1/4 cup milk
- 1/4 cup honey mustard
- 1 egg
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup honey mustard (for glazing)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground chicken, breadcrumbs, onion, bell pepper, milk, honey mustard, egg, garlic powder, salt, and black pepper.
- Mix until well combined.
- Transfer the mixture to a loaf pan and shape it into a loaf.
- Spread the additional honey mustard on top of the meatloaf.
- Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
- Let it rest for 10 minutes before slicing and serving.
Notes
- For added flavor, consider mixing in some herbs like thyme or parsley.
- Serve with your favorite sides such as mashed potatoes or steamed vegetables.
