Ingredients

  • 2 large sweet potatoes
  • 1/4 cup unsalted butter, softened
  • 1/4 cup honey
  • 1/2 cup sliced almonds
  • 1/2 teaspoon cinnamon
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
  3. In a bowl, mix the softened butter, honey, cinnamon, and salt until well combined.
  4. Once the sweet potatoes are cooked, let them cool slightly, then slice them in half lengthwise.
  5. Scoop out a portion of the flesh to create a boat shape, and mix the scooped flesh with the honey butter mixture.
  6. Fill the sweet potato halves with the honey butter mixture and top with sliced almonds.
  7. Return to the oven for an additional 10 minutes to warm through and toast the almonds.
  8. Serve warm and enjoy!
