- 2 large sweet potatoes
- 1/4 cup unsalted butter, softened
- 1/4 cup honey
- 1/2 cup sliced almonds
- 1/2 teaspoon cinnamon
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
- In a bowl, mix the softened butter, honey, cinnamon, and salt until well combined.
- Once the sweet potatoes are cooked, let them cool slightly, then slice them in half lengthwise.
- Scoop out a portion of the flesh to create a boat shape, and mix the scooped flesh with the honey butter mixture.
- Fill the sweet potato halves with the honey butter mixture and top with sliced almonds.
- Return to the oven for an additional 10 minutes to warm through and toast the almonds.
- Serve warm and enjoy!

- For a vegan option, substitute the butter with coconut oil.
