- 1/4 cup chia seeds
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- Green food coloring (optional)
- Fresh mint leaves for garnish
Instructions
- In a mixing bowl, combine almond milk, chia seeds, maple syrup, vanilla extract, and peppermint extract.
- Whisk the mixture until well combined.
- If desired, add a few drops of green food coloring and mix until the color is evenly distributed.
- Cover the bowl and refrigerate for at least 4 hours or overnight until the chia seeds have absorbed the liquid and the mixture has thickened.
- Once thickened, stir the pudding and divide it into serving cups.
- Garnish with fresh mint leaves before serving.
Notes
- For a creamier texture, blend the mixture before refrigerating.
- Adjust the sweetness by adding more or less maple syrup according to your taste.
