A delicious and healthy twist on the classic burrito, packed with chicken, fresh vegetables, and a crunchy wrap.
Ingredients

- 2 whole wheat tortillas
- 1 cup cooked chicken, shredded
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup shredded lettuce
- 1/4 cup low-fat cheese
- 1 avocado, sliced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a bowl, mix the shredded chicken, black beans, corn, diced tomatoes, red onion, cumin, salt, and pepper.
- Heat olive oil in a pan over medium heat.
- Place one tortilla in the pan and layer half of the chicken mixture on one half of the tortilla.
- Add lettuce, cheese, and avocado on top of the chicken mixture.
- Fold the tortilla over to create a half-moon shape and cook until golden brown, about 3-4 minutes.
- Flip and cook the other side until golden brown and crispy.
- Repeat with the second tortilla and remaining ingredients.
- Slice in half and serve warm.
Notes
- Feel free to add other vegetables like bell peppers or zucchini.
- For a spicier kick, add jalapeños or hot sauce.
- This recipe can be made vegetarian by omitting the chicken and adding more beans.
