A delicious and healthy twist on the classic burrito, packed with chicken, fresh vegetables, and a crunchy wrap.


Ingredients

  • 2 whole wheat tortillas
  • 1 cup cooked chicken, shredded
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup shredded lettuce
  • 1/4 cup low-fat cheese
  • 1 avocado, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the shredded chicken, black beans, corn, diced tomatoes, red onion, cumin, salt, and pepper.
  2. Heat olive oil in a pan over medium heat.
  3. Place one tortilla in the pan and layer half of the chicken mixture on one half of the tortilla.
  4. Add lettuce, cheese, and avocado on top of the chicken mixture.
  5. Fold the tortilla over to create a half-moon shape and cook until golden brown, about 3-4 minutes.
  6. Flip and cook the other side until golden brown and crispy.
  7. Repeat with the second tortilla and remaining ingredients.
  8. Slice in half and serve warm.

Notes

  • Feel free to add other vegetables like bell peppers or zucchini.
  • For a spicier kick, add jalapeños or hot sauce.
  • This recipe can be made vegetarian by omitting the chicken and adding more beans.
