- 1 pound Italian sausage
- 2 cups tortellini
- 4 cups vegetable broth
- 1 cup diced tomatoes
- 1 cup chopped carrots
- 1 cup chopped zucchini
- 1 cup chopped spinach
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned.
- Add the onion and garlic, sautéing until the onion is translucent.
- Stir in the carrots, zucchini, and diced tomatoes, cooking for about 5 minutes.
- Add the vegetable broth and bring to a boil.
- Once boiling, add the tortellini and cook according to package instructions.
- Stir in the spinach and Italian seasoning, cooking until the spinach is wilted.
- Season with salt and pepper to taste before serving.

- Feel free to add any seasonal vegetables you have on hand.

- For a vegetarian version, omit the sausage and use vegetable broth.
