Ingredients

  • 1 pound Italian sausage
  • 2 cups tortellini
  • 4 cups vegetable broth
  • 1 cup diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped zucchini
  • 1 cup chopped spinach
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add the onion and garlic, sautéing until the onion is translucent.
  3. Stir in the carrots, zucchini, and diced tomatoes, cooking for about 5 minutes.
  4. Add the vegetable broth and bring to a boil.
  5. Once boiling, add the tortellini and cook according to package instructions.
  6. Stir in the spinach and Italian seasoning, cooking until the spinach is wilted.
  7. Season with salt and pepper to taste before serving.
