Ingredients

- 2 large zucchinis, sliced
- 1 pound ground meat (beef, turkey, or chicken)
- 1 cup marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Add a drizzle of olive oil to a skillet over medium heat and cook the ground meat until browned, stirring consistently.
- Stir in the marinara sauce, Italian seasoning, salt, and pepper, and cook for an additional 2-3 minutes.
- Layer half of the zucchini slices evenly across the bottom of a baking dish.
- Spread half of the meat mixture over the zucchini, ensuring it’s evenly distributed.
- Sprinkle generously with half of the mozzarella cheese.
- Repeat the layers with the remaining zucchini, meat mixture, and cheese.
- Top with the grated Parmesan cheese.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
- Allow to cool slightly before serving.
Notes
This casserole can be made ahead of time and stored in the fridge. You can also use different types of ground meat or substitute with plant-based options.
