- 1 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely diced
- 1 cup corn kernels (fresh, canned, or grilled)
- 2 tablespoons chopped fresh cilantro
- Juice of 1 lime
- 1/4 cup mayonnaise
- 2 tablespoons sour cream or Greek yogurt
- 1 garlic clove, minced
- 1 tablespoon lime juice
- 1 teaspoon honey
Instructions
- Marinate the shrimp with olive oil, smoked paprika, chili powder, garlic powder, salt, and pepper for 15 to 30 minutes.
- Preheat your grill or grill pan to medium-high heat.
- Grill the shrimp for 2-3 minutes per side until opaque.
- Prepare the corn salsa by mixing corn, cherry tomatoes, red onion, cilantro, and lime juice in a bowl.
