Description
A delicious and healthy twist on traditional meatloaf, featuring Greek flavors and served with a refreshing tzatziki sauce.
Ingredients

- 1 lb ground chicken
- 1 cup breadcrumbs
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground chicken, breadcrumbs, feta cheese, parsley, onion, garlic, egg, oregano, salt, and pepper.
- Mix until well combined.
- Transfer the mixture to a loaf pan and shape it into a loaf.
- Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
- While the meatloaf is baking, prepare the tzatziki sauce by mixing yogurt, cucumber, garlic, lemon juice, and dill in a bowl.
- Once the meatloaf is done, let it rest for 10 minutes before slicing.
- Serve with tzatziki sauce on the side.
Notes
- For a gluten-free version, use gluten-free breadcrumbs.
- Feel free to add other herbs like mint or dill for extra flavor.
- Leftovers can be stored in the refrigerator for up to 3 days.
