A delicious and healthy twist on traditional meatloaf, featuring Greek flavors and served with a refreshing tzatziki sauce.


Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, feta cheese, parsley, onion, garlic, egg, oregano, salt, and pepper.
  3. Mix until well combined.
  4. Transfer the mixture to a loaf pan and shape it into a loaf.
  5. Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
  6. While the meatloaf is baking, prepare the tzatziki sauce by mixing yogurt, cucumber, garlic, lemon juice, and dill in a bowl.
  7. Once the meatloaf is done, let it rest for 10 minutes before slicing.
  8. Serve with tzatziki sauce on the side.

  • For a gluten-free version, use gluten-free breadcrumbs.
  • Feel free to add other herbs like mint or dill for extra flavor.
