- 2 chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 medium potatoes, diced
- 1 cup Greek yogurt
- 1 cucumber, grated
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- Fresh dill for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, oregano, garlic powder, salt, and pepper. Marinate the chicken breasts in this mixture for at least 30 minutes.
- Place the diced potatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 25-30 minutes until golden brown.
- While the potatoes are roasting, prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt in a bowl. Mix well and refrigerate.
- Cook the marinated chicken in a skillet over medium heat for about 6-7 minutes on each side or until fully cooked.
- Once everything is cooked, assemble the bowls with roasted potatoes, sliced chicken, and a generous dollop of tzatziki sauce. Garnish with fresh dill.
