- 500g chicken breast, diced
- 200g plain yogurt
- 2 tablespoons tikka masala paste
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 400g canned tomatoes
- 200ml coconut milk
- 2 tablespoons vegetable oil
- Fresh coriander, for garnish
- Salt, to taste
Instructions
- In a bowl, mix the chicken with yogurt and tikka masala paste. Marinate for at least 1 hour.
- Heat oil in a pan and sauté the onion until golden brown.
- Add garlic and ginger, cooking for another minute.
- Add the marinated chicken and cook until browned.
- Stir in the canned tomatoes and coconut milk, simmer for 20 minutes.
- Season with salt and garnish with fresh coriander before serving.
Notes
- For a spicier dish, add more tikka masala paste.
- Serve with rice or naan for a complete meal.
- Can be made ahead and reheated.
