- 12 Medjool dates
- 4 oz goat cheese
- 1/2 cup almonds, chopped
- 1/4 cup balsamic vinegar
- 1 tbsp honey (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Slice the dates lengthwise and remove the pits.
- In a bowl, mix the goat cheese and chopped almonds until well combined.
- Stuff each date with the goat cheese and almond mixture.
- Place the stuffed dates on a baking sheet and bake for 10-12 minutes until warm.
- In a small saucepan, heat the balsamic vinegar over medium heat until it reduces by half and thickens.
- Drizzle the balsamic reduction over the stuffed dates before serving.
Notes
- For a sweeter flavor, add honey to the goat cheese mixture.
- These can be served warm or at room temperature.
- Feel free to substitute walnuts or pecans for almonds if desired.
