- 1 cup rolled oats
- 1/2 cup almond flour
- 1/4 cup brown sugar
- 1/4 cup maple syrup
- 1/2 cup brewed coffee
- 1/4 cup molasses
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a large bowl, mix together the rolled oats, almond flour, brown sugar, baking powder, salt, and spices.
- In another bowl, combine the brewed coffee, maple syrup, and molasses.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- If using, fold in the chopped nuts.
- Spread the mixture evenly in the prepared baking dish.
- Bake for 25-30 minutes or until golden brown.
- Allow to cool before cutting into bars.
Notes
- Store in an airtight container for up to a week.
- These bars can be frozen for longer storage.
