Ingredients

- 1 medium spaghetti squash
- 2 cups cooked chicken, shredded
- 2 cups fresh spinach
- 1 cup grated parmesan cheese
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle olive oil over the squash halves and season with salt and pepper.
- Place the squash cut-side down on a baking sheet and roast for 30-40 minutes until tender.
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add spinach and cooked chicken to the skillet, cooking until spinach is wilted.
- Mix in half of the parmesan cheese and stir until combined.
- Once the squash is cooked, use a fork to scrape the flesh into strands.
- Combine the spaghetti squash strands with the chicken and spinach mixture.
- Stuff the mixture back into the squash halves and top with remaining parmesan cheese.
- Bake for an additional 10 minutes until cheese is melted and bubbly.
Notes
- For a vegetarian option, omit the chicken and add more vegetables.
- Feel free to add herbs like basil or oregano for extra flavor.
- Leftovers can be stored in the refrigerator for up to 3 days.
