Description

A delicious and healthy dish featuring spaghetti squash stuffed with garlic, parmesan, chicken, and spinach.


Ingredients

  • 1 medium spaghetti squash
  • 2 cups cooked chicken, shredded
  • 2 cups fresh spinach
  • 1 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil over the squash halves and season with salt and pepper.
  4. Place the squash cut-side down on a baking sheet and roast for 30-40 minutes until tender.
  5. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  6. Add spinach and cooked chicken to the skillet, cooking until spinach is wilted.
  7. Mix in half of the parmesan cheese and stir until combined.
  8. Once the squash is cooked, use a fork to scrape the flesh into strands.
  9. Combine the spaghetti squash strands with the chicken and spinach mixture.
  10. Stuff the mixture back into the squash halves and top with remaining parmesan cheese.
  11. Bake for an additional 10 minutes until cheese is melted and bubbly.

Notes

  • For a vegetarian option, omit the chicken and add more vegetables.
  • Feel free to add herbs like basil or oregano for extra flavor.
