Instructions
Now that your ingredients are ready, let’s create this colorful, creamy, and crunchy dessert.
If using store-bought sugar cookie shells, lightly brush with melted butter and sprinkle with granulated sugar if desired. For homemade shells, bake sugar cookie dough in a taco mold or over a rolled towel in a muffin tin to achieve a curved shape. Allow shells to cool completely before filling.
In a large mixing bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and creamy. In a separate bowl, whip heavy cream with powdered sugar (if using) to stiff peaks. Gently fold the whipped cream into the cream cheese mixture until fully incorporated, creating a light and fluffy cheesecake filling.
Use a spoon or piping bag to fill each cooled sugar cookie shell generously with the cheesecake filling. Smooth the top lightly to create an even surface for the toppings.
Sprinkle Fruity Pebbles generously over the cheesecake filling, pressing lightly so they adhere. Add optional rainbow sprinkles, mini chocolate chips, or a drizzle of chocolate/caramel sauce for added color, flavor, and decoration.
Place the filled tacos in the refrigerator for at least 1 hour to allow the cheesecake filling to set slightly and meld with the toppings. This ensures the tacos hold their shape and the flavors come together beautifully.
Serve chilled straight from the refrigerator for a refreshing and fun dessert. Arrange on a colorful platter for parties or individual serving plates for a more elegant presentation.
