Description

A nostalgic and creamy salad made with acini di pepe pasta, fruit cocktail, crushed pineapple, and mini marshmallows, perfect for potlucks and gatherings.


Ingredients

  • 1 cup acini di pepe pasta
  • 2 cups water
  • 1 can (15 ounces) fruit cocktail, drained
  • 1 can (8 ounces) crushed pineapple, drained
  • 1 cup mini marshmallows
  • 1 cup whipped cream or whipped topping
  • 1/2 cup coconut (optional)
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup sugar
  • 1/4 cup instant vanilla pudding mix
  • 1/4 teaspoon salt

Instructions

  1. In a medium saucepan, bring 2 cups of water to a boil. Add the acini di pepe pasta and cook according to the package instructions until it reaches al dente. Drain and rinse in cold water.
  2. In a large bowl, combine the cooked pasta, fruit cocktail, crushed pineapple, mini marshmallows, coconut (if using), and nuts (if using). Mix gently.
  3. In another bowl, whisk together the sugar, instant vanilla pudding mix, and salt.
  4. Fold the sugary pudding mixture into the fruit and pasta blend.
  5. Finally, gently fold in the whipped cream until fully incorporated.
  6. Refrigerate for at least 2 hours to allow flavors to meld.
