Description
A nostalgic and creamy salad made with acini di pepe pasta, fruit cocktail, crushed pineapple, and mini marshmallows, perfect for potlucks and gatherings.

- 1 cup acini di pepe pasta
- 2 cups water
- 1 can (15 ounces) fruit cocktail, drained
- 1 can (8 ounces) crushed pineapple, drained
- 1 cup mini marshmallows
- 1 cup whipped cream or whipped topping
- 1/2 cup coconut (optional)
- 1/2 cup chopped nuts (optional)
- 1/2 cup sugar
- 1/4 cup instant vanilla pudding mix
- 1/4 teaspoon salt
Instructions
- In a medium saucepan, bring 2 cups of water to a boil. Add the acini di pepe pasta and cook according to the package instructions until it reaches al dente. Drain and rinse in cold water.
- In a large bowl, combine the cooked pasta, fruit cocktail, crushed pineapple, mini marshmallows, coconut (if using), and nuts (if using). Mix gently.
- In another bowl, whisk together the sugar, instant vanilla pudding mix, and salt.
- Fold the sugary pudding mixture into the fruit and pasta blend.
- Finally, gently fold in the whipped cream until fully incorporated.
- Refrigerate for at least 2 hours to allow flavors to meld.

Make-ahead tips: This salad can be prepared a day in advance. Allow to chill thoroughly before serving.
