Instructions
- Preheat the oven to 350°F (175°C) and grease a jelly roll pan.
- In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together eggs, buttermilk, oil, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients and mix until smooth.
- Fold in the melted German chocolate, coconut, and pecans.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then invert onto a clean kitchen towel dusted with powdered sugar.
- Roll the cake up with the towel and let it cool completely.
- Unroll the cake, spread with frosting, and re-roll before serving.
