Description

A comforting bowl of tender beef chuck roast simmered with sweet pineapple and smoky chipotle flavors, perfect for family dinners.


Ingredients

  • 34 lbs beef chuck roast
  • 2 cups pineapple chunks (fresh or canned)
  • 1 cup pineapple juice (reserved from canned if using)
  • 12 chipotle peppers in adobo sauce, chopped
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt & pepper, to taste
  • 2 tbsp olive oil
  • 4 cups cooked rice (white, brown, or cauliflower rice)
  • 1 can black beans, drained & rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 red bell pepper, chopped
  • 1 avocado, sliced
  • Fresh cilantro, chopped
  • Lime wedges, for serving

Instructions

  1. Season your roast generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear the beef for 3–4 minutes on each side.
  3. Place the seared roast into the slow cooker and layer on chopped onions, minced garlic, chipotle peppers, and pineapple chunks.
  4. Whisk together reserved pineapple juice, beef broth, tomato paste, soy sauce, Worcestershire sauce, ground cumin, and smoked paprika in a mixing bowl.
  5. Pour the sauce over the beef and veggies in the crockpot.
  6. Cover and set the crockpot on low for 8–10 hours or on high for 4–6 hours.
  7. Remove the roast and shred it with two forks before returning it to the crockpot.
  8. Cook for another 10–15 minutes to soak in the sauce.
  9. Layer cooked rice in bowls and top with shredded beef, black beans, corn, bell pepper, and avocado slices.
  10. Garnish with fresh cilantro and lime wedges before serving.
