- 2 pounds of potatoes, diced
- 1 cup of mayonnaise
- 1/2 cup of sour cream
- 1/4 cup of chopped green onions
- 1/4 cup of crispy bacon bits
- 1 tablespoon of Dijon mustard
- Salt and pepper to taste
Instructions
- Boil the diced potatoes in salted water until tender, about 15 minutes.
- Drain the potatoes and let them cool completely.
- In a large bowl, mix together the mayonnaise, sour cream, Dijon mustard, salt, and pepper.
- Add the cooled potatoes, green onions, and bacon bits to the bowl and gently mix until well combined.
- Chill the salad in the refrigerator for at least 1 hour before serving.
