Ingredients

  • 1/4 cup of pickles, chopped
  • 1/4 cup of fresh parsley, chopped
  • Salt and pepper to taste
  • 1 cup of crispy bacon, crumbled (optional)

Instructions

  1. Boil the diced potatoes in salted water until tender, about 10-15 minutes.
  2. Drain the potatoes and let them cool completely.
  3. In a large bowl, mix together the mayonnaise, Dijon mustard, celery, red onion, pickles, and parsley.
  4. Add the cooled potatoes to the mixture and gently fold until well combined.
