Ingredients

- 2 pounds of potatoes, diced
- 1 cup of mayonnaise
- 1 tablespoon of Dijon mustard
- 1/2 cup of celery, chopped
- 1/2 cup of red onion, chopped
- 1/4 cup of pickles, chopped
- 1/4 cup of fresh parsley, chopped
- Salt and pepper to taste
- 1 cup of crispy bacon, crumbled (optional)
Instructions
- Boil the diced potatoes in salted water until tender, about 10-15 minutes.
- Drain the potatoes and let them cool completely.
- In a large bowl, mix together the mayonnaise, Dijon mustard, celery, red onion, pickles, and parsley.
- Add the cooled potatoes to the mixture and gently fold until well combined.
- Season with salt and pepper to taste.
- If using, fold in the crispy bacon.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- For a healthier version, use Greek yogurt instead of mayonnaise.
- Feel free to add other vegetables like bell peppers or corn for extra flavor.
- This salad can be made a day in advance for better flavor.
