Instructions
- Marinate the chicken: Place the chicken breasts in a bowl and pour the dill pickle juice over them. Let it marinate in the refrigerator for at least 1 hour, preferably longer for maximum flavor.
- Prepare the coating: In a separate bowl, mix the breadcrumbs, grated Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
- Heat the oil: Preheat a generous amount of oil in the frying pan over medium heat until it shimmers.
- Coat the chicken: Remove each chicken breast from the marinade, shaking off any excess juice. Dredge each piece in the breadcrumb mixture, pressing to ensure a thick coating.
- Fry to perfection: Carefully lay the coated chicken in the hot oil. Fry for about 6-8 minutes on each side or until golden brown and the internal temperature reaches 165°F.
- Serve hot & enjoy: Once cooked, transfer the chicken to a paper towel-lined plate to soak up excess oil. Allow it to cool slightly before serving.
Notes
For a healthier option, consider air frying at 380°F for 10-12 minutes. Avoid overcrowding the pan to achieve a crispy coating.
