- 2 salmon fillets
- 8 ounces pasta (fettuccine or penne)
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for garnish
Instructions
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Carefully add the salmon fillets and cook for 4-5 minutes on each side until flaky. Remove from skillet.
- Add minced garlic to the skillet and sauté for 1 minute.
- Pour in the heavy cream, stirring continuously, and cook for 2-3 minutes until slightly thickened.
- Add the fresh spinach, stirring until wilted.
- Flake the cooked salmon into bite-sized pieces and gently fold into the sauce.
- Toss with the drained pasta, adding reserved pasta water if needed for consistency.
- Season with salt and pepper to taste.
- Serve warm, topped with freshly grated Parmesan cheese.
